What is sujuk?

Sujuk, also known as sucuk, is a type of dried and fermented sausage that originated in the Middle East and Central Asia. It is popular in various cuisines, including Turkish, Armenian, and Balkan.

Sujuk is typically made from ground beef, beef fat, and various spices such as cumin, garlic, and red pepper flakes. The mixture is then stuffed into a casing and left to dry and ferment for several days.

The sausage has a dense and chewy texture and a smoky, spicy flavor, which is derived from the use of traditional spices. It is often sliced thinly and used as a topping for flatbreads, pizzas, or sandwiches.

Sujuk is also commonly served as a breakfast food, with eggs, tomatoes, and cheese. It is a rich source of protein and can be stored for long periods of time without refrigeration, making it a popular food for camping or backpacking trips.
